MANGO PANCAKE
INGREDIENTS
Ripe Mangoes - 2
Maida/ Atta - 1cup
Sugar - 2Tbsp + 3Tbsp
Egg - 1
Milk to adjust the consistency - 1/2 cup
Baking pwdr - 1tsp
Oil- 4Tbsp
Fresh Cream - to serve with
Honey or Maple syrup can also accompany Pancakes
METHOD
In a mixer jar, take the pulp of 1mango, put maida or atta, egg, milk, baking pwdr, 2Tbsp sugar.mix it thoroughly.
The batter should not be very thin. If it is too thin, then add little maida or atta. If it is too thick then adjust with the addition of milk.
Heat a nonstick tawa, put 1tsp oil,spread it onto the tawa, when the tawa is hot enough, put a ladle full of the pancake batter,and dont spread it like a dosa, let it b thick.
Put some chopped Mango pieces onto it.
Reduce the heat, or else it will darken fast due to the sugar added to it.
Turn the pancake, let the other side cook for just a minute.
Put it onto the serving dish, with the help of a strainer, sprinkle some powdered sugar onto the pancake.
Serve with fresh cream.
