MANGO PANCAKE

INGREDIENTS Ripe Mangoes - 2 Maida/ Atta - 1cup Sugar - 2Tbsp + 3Tbsp Egg - 1 Milk to adjust the consistency - 1/2 cup Baking pwdr - 1tsp Oil- 4Tbsp Fresh Cream - to serve with Honey or Maple syrup can also accompany Pancakes METHOD In a mixer jar, take the pulp of 1mango, put maida or atta, egg, milk, baking pwdr, 2Tbsp sugar.mix it thoroughly. The batter should not be very thin. If it is too thin, then add little maida or atta. If it is too thick then adjust with the addition of milk. Heat a nonstick tawa, put 1tsp oil,spread it onto the tawa, when the tawa is hot enough, put a ladle full of the pancake batter,and dont spread it like a dosa, let it b thick. Put some chopped Mango pieces onto it. Reduce the heat, or else it will darken fast due to the sugar added to it. Turn the pancake, let the other side cook for just a minute. Put it onto the serving dish, with the help of a strainer, sprinkle some powdered sugar onto the pancake. Serve with fresh cream.

CHICKEN CUTLET

INGREDIENTS Boneless chicken-250g Oil-2Tbsp+ for deep frying Ginger Garlic Paste- 2Tbsp Chopped Green chillies-1Tbsp Chopped Onion-1 Salt to taste Jeera pwdr-1Tbsp Garam masala pwdr-1Tbsp Coriander pwdr-1Tbsp Cornflour OR Maida-2Tbsp Boiled Potato-1 Pudina Dhaniya Chutney METHOD Boil d boneless chicken, then grind it in a blender. Add 2tbsp oil in a kadhai, put ginger garlic paste, chopped green chillies, chopped onion, stir fry. Then add d minced chicken, add salt, jeera pwdr, garam masala, coriander pwdr, mix it well. Mixture is ready. let it cool, then add cornflour or maida- 2 tbsp,add 1 boiled potato,mash it. Shape it into small balls, then deep fry d cutlets. Serve hot wid pudina dhaniya chutney..

CABBAGE AND PANEER STIR FRY

INGREDIENTS Paneer-250g Small Cabbage-1 Ghee-2Tbsp+ 1Tbsp Oil-1Tbsp Jeera-1tsp Whole Red Chillies-2 Dhaniya pwdr-1Tbsp Jeera pwdr- 1Tbsp Red chilli pwdr-1tsp Salt to taste Coriander- 1Tbsp METHOD Slightly fry d paneer in ghee after cuttin it into cubes. Then take it out n add it at d last step. Put 1tbsp ghee into the kadhai,  add 1tbsp oil, then put jeera ,dried red chillies. Add the shredded cabbage,stir fry. Put some dhania pwdr, jeera pwdr n red chilli pwdr,salt. Cover and cook for 3min, add d paneer, finely chopped coriander.

TIPSY PUDDING

    INGREDIENTS Bread Marie biscuits concentrated /reduced milk- 500ml custard-500ml chocolate sauce          METHOD Its a bread n biscuit pudding. Preferably take a square dish, its easier to layer it. The 1st layer is of bread, remove d sides n roughly tear d bread pieces n put it at d base. Make some custard,not very thick,spread it onto it. Next layer wid marie biscuits, by breakin it into pieces n not powder. Make some c oncentrated milk or u call it kheer, which is nothin but 1L milk reduced to half. Add this on top of d biscuits. 3rd layer again of d bread, followed by custard n 4th layer of biscuit n kheer. On top u can put fruits or decorate it wid dark chocolate sauce. Refrigerate it, n serve cold.
